The difference between the two types of core is the symmetry of the core. Meaning, is the core the same on both sides of a line drawn down the middle?
Each core time comes with its own reaction type.
Asymmetric cores have a mass bias due to the lack of symmetry of the core. This mass bias will cause the ball to react harder off the spot if the mass bias is strong enough. What I mean is every ball has a mass bias once drilled (with a few rare exceptions). But these drilled mass bias's are fairly weak.
With asymmetric balls you can drill them in a lot of different ways. Depending on the angle of the mass bias as well as the distance from the pin to your PAP.
Symmetric bowling balls are the exact opposite. They have symmetry when a line is drawn down the middle of the ball. This causes the ball to be a lot smoother overall and cleaner through the heads. Some symmetric bowling balls can react almost like an asymmetric ball depending on the balls numbers. One ball that comes to mind like this is a hy-road.
Neither of the two are better or worse. Everyone has their own preference and its not a bad idea to have some of both in your bag. Asymmetric balls tend to be more of the high end bowling balls and cost more. I personally prefer symmetric for the versatility it gives you with your hand positions.
